AOAC Official Method 920.122 Cheese Collection of Samples Procedure First Action 1920 ( See also 968.12 [ see 33.1.01] and 970.30 [ see 33.1.06].) When cheese can be cut, take narrow wedge reaching from outer edge to center. When not permissible to cut cheese, take sample with cheese trier. If only one plug can be obtained, take it perpendicular to surface of cheese at point 1 3 distance from edge to center and extending either entirely or half-way through. When >1 plug can be taken, draw 3 plugs, one from center, one near outer edge, and one midway between other two. Use ca 2 cm ( 3 4 in.) of rind portion of core to reseal hole. Sample bulk containers of cottage and similar cheeses by stirring thoroughly for ³ 5min with stirrer so that all portions of container are reached. Remove several surface portions with spoon to fill 0.5 L (1 pt) jar, and cover.
