Ingredients and preparation of model foods were similar to xMAP sesame assay validation (Cho et al., 2020).

Chili powder, cumin, oregano, garlic, onion, coriander seed, ginger, lemon peel, cinnamon, star anise, white pepper, cayenne pepper, jalapeno chilies, and green peppercorn.
