Summary:

This is an enzymatic method for determination of low level ethanol content in kombucha, fruit juices and alcohol-free beer. The quantification is based on catalytic activity of alcohol dehydrogenase which oxidizes ethanol to acetyldehyde and converts NAD to NADH. Absorbance NADH is measured at 340 nm and is converted to ethanol concentration.
