Summary:

This method is the headspace GC/MS determination of ethanol in Kombucha tea. The sample is diluted 100X, n-butanol added as internal standard, and analyzed against a calibration curve prepared in water. The method does determine low levels of alcohol in Kombucha, however it does not express the values obtained as % ABV. The actual values calculated are % alcohol by weight since calibration is for ug of ethanol.

The analytical technique of this method (GC-MS) adequately met the SMPRs of accuracy and repeatability for the spike levels done. Due to the calculation by weight for ethanol, the lower spike levels necessary to demonstrate applicability at 0.1% ABV and the LOQ of .05% ABV were not truly demonstrated, however it is felt that the method would meet these requirements.

%ABV was not appropriately applied, as values reported are actually percent alcohol by weight. All other definitions are adequately used.

The method as written does not contain precautions related to the flammability and toxicity of butanol and ethanol. Suggested addition: Ethanol and butanol are flammable solvents, keep away from ignition sources and flames. During use, avoid skin contact, wear eye protection, and avoid breathing vapors by working under a fume hood if possible.
