Matrix Example: Honey o Need documentation of feeding protocols – Is honey authentic if the beekeeper has fed his bees sucrose solution when flowers were out of season? o Must all honey be collected directly from honeycombs as stated in the SMPR? What about processed honey? – Adulteration can happen at any point – Ensure that methods can detect raw adulterants and processed adulterants o Analytical tests should include sugar profile, C3/C4 sugars, and water. Are there standardized methods to be used?
