 STEP 1: Test product AS IS initially to determine test assay compatibility  STEP 2: Spike each product with low level (<10 CFU/test portion) of Salmonella  STEP 3: Evaluate multiple dilutions, enrichment media, and enrichment times  Enrichment: 1:10 or 1:20 dilution of product, buffered peptone water, 35  C, 18 ‐ 24 h incubation of 25 g samples  Detection using GENE ‐ UP®  Ten color additive products tested  All products demonstrated acceptable organism recovery and detection of target organism  Next step  ‐ addition of the color additive turmeric to existing AOAC PTM 121802 through matrix extension
