PROPOSAL: A NEW ENVIRONMENT STANDARDIZED METHODS, APPROPRIATE REGULATION, AND ACCURATE TESTING! • FITNESS FOR PURPOSE: Methods for kombucha must: – High precision for very low amounts of alcohol (0‐0.49% ABV) – High accuracy in light of unique matrix of kombucha – Consistency across labs  – Cost‐effective methodology • KBI did its own research! – GC did show promise when: • Headspace + Mass Spectrometry  • Direct injection + FID – Sam Labonia @ Cornerstone Labs (TTB recognized) wrote methodology • Showed repeatability, accuracy, precision highly specific calibration & validation needed
