CONCLUSIONS:
1. This study confirmed the great overestimation of gluten content when using the Ridascreen Gliadin Kit (R7001) on samples spiked with barley and rye flours.
2. When analyzed with the Ridascreen Total Gluten Kit (R7041), the quantification of gluten from barley and rye flours was more accurate compared to the Ridascreen Gliadin Kit (R7001).
3. The GlutenTox ELISA Rapid G12 Kit yielded results comparable to those obtained with the Ridascreen Total Gluten Kit (R7041) in most of the cases or showed a slight overestimation; therefore, it can also be used to quantify gluten from barley and rye.
