Lipids and MFGM in human milk

In human milk, fat is present as fat globules in a natural fat-in-water emulsion 1

Over 98% of the fat in human milk is in the form of triglycerides, including essential fatty acids (omega-3 and omega-6 LC-PUFAs), mono-, diglycerides, free fatty acids, cholesterol, phospholipids and fat-soluble vitamins 1

Human milk has an average fat content of ~4%, with MFGM levels of 0,7 - 2,1 g/L MFGM 2
