OMA Protocol Review: OMAMAN-56 Sulfites in Shrimp

1. Biofish-300 Technology and Application

The Biofish-300 SULPHITE method is a simple, reliable and specific enzymatic biosensor for the quantification of sulphite in different matrices: raw shrimp head on, raw shrimp head off and boiled shrimp, measured as SO 2. . It is intended for the determination of sulphite in processing plants or laboratories to ensure sulfite concentrations are below legal limits. The method has been certified by the AOAC Performance Tested Methods Program (PTM 031802) for raw shrimp with head on, raw shrimp with head removed, and cooked shrimp. The re are two different measurement ranges (See Table 1): • 30-150 mg/kg with maximum 10% error and a quantification limit of 30 mg/kg. • 50-300 mg/kg with maximum 10% error and a quantification limit of 50 mg/kg.
