OMA Protocol Review: OMAMAN-56 Sulfites in Shrimp

The quantity of sulfiting agents added to food should not exceed the amount necessary to achieve

the intended preservative effect. If the total amount of sulfiting agent added to food results in a

concentration of 10 ppm or greater, which is the current limit of analytical detection by the optimized

Monier-Williams method (OMA 990.28), then the sulfiting agents must be listed as an ingredient on the

product label (3). Apart from that, the maximum level of sulfites is regulated and may not exceed a certain

value, depending on the country and the type of product (2).

Sulfites are compounds that contain the sulfite ion SO 3

2- . Currently, there are six sulfiting agents

allowed in processed food. The names by which they are listed on food labels are: sulfur, sodium sulphite,

sodium bisulfite, sodium metabisulfite, potassium bisulfite and potassium metabisulfite.
